Holy Cannoli Overnight Oats Recipe

Confession- I eat instant oats. And I microwave them.

Every blog I read seems to use different oats- Scottish, rolled, old fashioned, oat bran- you name it. I was pretty content with my instant oats until I tried Coach’s oats.

I won two packs of Coach’s through a giveaway a while ago and totally forgot about them until I was cleaning out my pantry recently. According to the Coach’s oats website, ‘the groats are toasted to bring the natural sugars to the surface of the oat, then cracked into small pieces.’ They also cook pretty fast- bonus!

The only problem was that the serving was tiny, so because I have the appetite of three people, I added in a 1/4 cup of instant oats (my bad) to bulk up my serving. Dare I say this was one of the best bowls of oatmeal I’ve ever had?

Holy Cannoli Oats aka Overnight  Oats Recipe

Ingredients:

  • 1/4 cup Coach’s oats
  • 1/4 cup regular oats
  • 1 1/2 cups water
  • 1/4 cup ricotta cheese, divided
  • Dash cinnamon
  • Toppings: chocolate chips, honey

Directions:

  • The night before you want to eat these, cook the oats and water together in the microwave or stovetop until most of the water is absorbed. (I microwaved everything together for about 4 minutes.)
  • Let the oats cool and stir in 2 tablespoons of ricotta cheese and cinnamon. Cover and pop in the fridge overnight.
  • The next morning, heat the oats again (if desired) and top with the remaining ricotta, chocolate chips, and honey.

Holy mother of god.

Let’s be honest- melted chocolate chips would really make anything taste good, but this bowl of oatmeal was exceptionally delicious. Instant oats get kind of gluey, and even though half the bowl had instant oats in it, the chewiness of the Coach’s oats really masked it. I got the idea to combine chocolate chips, honey, and ricotta – such a good flavor combination!

Winning… in the sense that I won the packet of oats and also in the Charlie Sheen sense of the word.

Although I won two packets of oats, someone else in my family ate the other pack (argh) so I had to settle for oat bran this morning. Not complaining- I’ve discovered that I love oat bran recently!

I cooked the oat bran using the voluminous oatmeal method and let sit overnight. This morning, I heated them up again and used the rest of my chocolate chips and a special ingredient on top- pretzels!

Y’all know I love sweet and salty, so this flavor combination was epic. Crispy, crunchy, salty, sweet, and creamy. Every flavor and texture was in this bowl!

What’s one thing you could eat every day and not get sick of? I could definitely eat chocolate chips every day- too bad I finished them!
