- Ingredients
For 3/4 liter of ice cream (about 8 balls/portions) : - 300 mL whole milk
- 200 mL liquid cream
- 4 egg yolks
- 80 g powdered sugar
- 15 g fresh ginger
Optional: add 100 g candied ginger
Preparation
- Grate or finely chop the piece of fresh ginger.
- Put the milk and liquid cream in a saucepan.
- Then simmer at medium heat.
- When the mixture comes to a boil, turn off the heat and add ginger.
- Cover the pan and let it brew for a good quarter of an hour.
- Meanwhile, put the sugar and egg yolks in a salad bowl.
- Whisk vigorously until the mixture whitens and foams slightly.
- While filtering it to remove the pieces of ginger, pour the milk / cream mixture over the egg yolks.
- Whisk until the preparation is homogeneous.
- Rinse the pan and pour the preparation into it.
- Heat over low heat, stirring with a whisk without stopping, until the mixture thickens. It must have the consistency of a liquid cream.
- Turn off the heat and pour into the salad bowl.
- Cover, let cool and set aside overnight in a cool place.
- Blend with a blender.
Optional: cut the candied ginger into small pieces and add it to the preparation just before adding the mixture to the blender.
