This birthday morning (woohoo! ) started out with another rainy walk with the pups. The rain doesn’t seem to bother me anymore (perhaps because I always throw on the same hideous, yet comfortable outfit?) and we walked for about 30 minutes before coming home and toweling off.
Breakfast
A warm breakfast was calling my name so I made some cinnamon apple oatmeal (Kirkland Oatmeal is the bomb!) and topped it with fruit and a splash of 2% milk. Mmm, I love oats in the fall and wintertime! So comforting and delicious.
I also had a hot mug of coffee with half and half while watching Live with Regis and Kelly and the Today Show.
Lunch
Since I worked the late shift at work today I decided to cook up something to take to work for lunch. Mac n’ cheese was calling my name!
Although the boxed mac n’ cheese is amazing, I decided to make my homemade version today. Change is a good thing sometimes
Easy Homemade Mac n’ Cheese Recipe
Serves: 2
Ingredients:
- 2 cups (dry) whole wheat pasta
- 1/2 cup shredded cheddar cheese
- 1 laughing cow cheese wedge
- 1/2 cup 2% milk
- 1 tbsp flour
- 1 tbsp mustard
- 1 large green pepper- chopped
- 2 small tomatoes- chopped
- Salt and pepper to taste
Cook pasta according to package directions. Meanwhile, heat a pan over medium heat. Spray the pan with cooking spray (or use a tbsp of olive oil). Cook the veggies until tender. Season with salt and pepper.
In a bowl mix together the milk and flour until blended. Add the mixture to the veggies and stir until it begins to thicken. Add the mustard and mix together.
Then add the cheese and mix well. If the sauce is too thick, thin with a bit more milk.
Add the cheese sauce and veggie mixture to the pasta and mix together.
Eat and enjoy!

Birthday Plans
I already celebrated my birthday with my parents over the weekend and will be going out to dinner (Mexican food baby!) with Andy and his family tomorrow night.
Andy and I have a hot date on Saturday together. I can’t wait! I think I want to go to Noosa, where we went for our 5-year anniversary…those martinis are calling my name!
